Arugula Salad with Lemon Dressing and Pine Nuts

 
An arugula salad with pine nuts, goat cheese and ciabatta makes a nice light meal in the heat of the summer.It’s starting to get hot in Colorado as summer comes along.  Rick and Paola are in Italy for a couple of months, but before leaving they planted some arugula seeds and then left me (Maria Elena ) to take care of them. One of my favorite recipes for arugula (also known as rocket lettuce or rucola in Italian) is a quick and simple salad:
 
Take 2-3 cups of baby arugula leaves
2 tablespoons olive oil (the good kind!)
1 small lemon juiced, or 1/2 a large lemon juiced
a handful of pine nuts
salt to taste
 
Combine the olive oil and lemon in a small bowl and then pour over the cleaned arugula leaves.  Toss the salad and add pine nuts. 
 
Additions and alterations: place some of this great salad on Carpaccio (thinly sliced beef) or do as I did, add some goat cheese and good ciabatta bread on the side – these flavors combine very well.
